My SIL cancelled her Memorial Day/Birthday barbecue because her township cancelled their parade. Weird, because the rain is supposed to hold off over there until 3pm at least, so now we're on our own. Had to go to Fresh Market to get burgers, etc. because I have nothing that's not frozen right now.

I’m definitely more of a flame grilled burger guy, personally. Just had ours, and it was nice to get on the grill again. I made way too much German potato salad now that the party was cancelled, so we’ll be having that nightly for the next few days, lol

My m-i-l grilled her burgers at 11 am for a 1 pm picnic because she was afraid it was going to rain. She’s 86 and doesn’t have internet but she does have weather channel on tv. It’s not going to rain till at least 4 and probably not till 6.

Add in that she freaking cooks everything so long it’s destroyed and I may need to supplement with some burgers of my own later.

My pork butt has been in the smoker since around 7:30. It’s humming along pretty good. Target serve time is 5:30. We got some corn on the cob, coleslaw and potatoes to go with it. Hoping for the best.

I quit giving target completion times. too many variables. I got chewed out once for not having a brisket ready on time. No guarantees if it’s going to be done right.

You just increase or decrease the rest time for a brisket.

Even at professional pits they say a range. Like "it takes 12 - 16 hours". It's done when it's done......... which is mainly why I don't bbq. ;)

Turned out perfect and ahead of schedule 8-)

I let it rest in the cooler for about an hour and a half. Cooked it at 275 the whole time. I used an aluminum pan with some water and apple juice. I poured that mixture over it before I wrapped it.

Made a killer burrito for dinner. Homemade shredded chicken breast chili, BROWN RICE, sharp cheddar cheese, and tamed jalapenos in a spinach wrap.

I made a jalapeno fatty for a get together on Saturday. Turned out awesome. Bacon weave, 2lbs of bulk sausage, 4 oz of cream cheese, shredded cheddar, and diced jalapenos. Rolled it up and smoked it for 2 hours at 250.
